Homemade Mayo II

A while back, I posted how to make your own Mayonnaise: here, but I must admit that even the best I've made has been lacking somehow. I can't really put my finger on it, but I'm willing to bet that it's because it doesn't have all the chemicals in it that "regular" mayo does. That stuff is designed to fool you into thinking it's great when it's really not.

SO, after I heard about making Mayo with bacon grease, despite LOVING bacon, I resisted because I figured that the result would be too salty or bacony. I decided to try it after I drained my dedicated bacon frying pan and found I had a LOT! I figured that even if I didn't like it, I wouldn't be out much, so why not try it?

OH. MY. GODS! Mmmmmmmmmmm...........

No seriously.

I put 2 eggs into my blender with a good squirt of mustard and a dash of salt. I forgot that I was going to omit the salt due to the inherent saltiness of bacon grease, but this didn't actually make a difference. It worked out wonderfully. I think this is because the eggs and mustard balance out the saltiness.

In any case, after blending the eggs, mustard, and salt just enough to call it blended, I slowly poured in about 3/4 a cup or so melted - but not hot! - bacon grease. When it emulsified, I was still left with a pretty runny product, but guess what: Bacon grease solidifies! After setting it in the fridge for a while, it turned into almost the perfect consistency.

But best of all is the taste. Did I mention that this stuff is seriously yummy? It totally is! It is NOT overly bacon flavored. Nor is it salty. It is everything I love about Mayo with a hint of bacon in the background. I can't wait to try it again with other herbs and seasonings.

In conclusion, if you ever make a large Sunday breakfast or brunch and find yourself with a drip pan full of bacon grease, rather than throw it out as most people do these days - I still remember growing up how my grandparents had a special crock thing to save their bacon grease in. I WANT that crock! - why not blend it with two eggs and some mustard just to see what I'm talking about?

    1. I don't like it with lemon juice for some reason, but I didn't even think to try adding vinegar. I bet that would have brought out the flavors and made them pop in my mouth! Gotta remember to try it next time :-)
